Weight Watchers Cupcakes - 2.5 points each
The recipe said that it makes 12 but I only made 9 out of the recipe.
Ingredients: 125g S R Flour, 1 tsp Baking Powder, 6 tbls Splenda, 125g low fat Spread (I used PURE SOYA), 2 eggs, 1 tsp vanilla extract, 1tbsp skimmed milk.
Frosting: 200g low fat soft cheese, 6tbsp icing sugar, food colouring, sugar flowers to decorate. ( The icing is very runny but tasty).
Pre-heat Oven to 190. Put all ingredients into a Food mixer and mix to a nice consistency. Cook for 12-12 mins.
Beat the Soft cheese & icing sugar together and once cupcakes are cool spoon the mixture on top and then top with a sugar flower.
& then enjoy this little piece of indulgence at 2.5 WW points.
Lemon Meringue Cupcakes
These cupcakes don't do themselves justice but they taste scrumptious :0)
(ENSURE YOU USE SILICONE CASES)
Ingredients: 100G SR Flour, 100G Caster Sugar, 100G Butter, 2 eggs and either lemon essence, juice of lemon or tablespoon of lemon card.
Pre-heat oven to 170. Put all the ingredients into a food mixer and mix to a nice consistency. Cook for approx 15 minutes.
Leave to cool. In the meantime, use a Lemon Meringue mix. Make up the lemon mix as per the packet. Whisk up the egg whites.
Once cakes are cool. Cut a small hole in each cake and fill with Lemon mix put the cake back on top and top with meringue and then put under the grill for a few minutes. I then put into a little fairy case.
Enjoy these scrumptious delicacies.
